Tanzanian Cinnamon for ExportCinnamon Bark & Quills (Mdalasini) Supplier
Cinnamon from Zanzibar and mainland Tanzania: bark peeled by hand, sun-dried into quills and pieces, cleaned and graded, whole or ground, for spice packers, importers and wholesalers.

Product overview
Cinnamon is the dried inner bark of the cinnamon tree. In Swahili it is mdalasini, and it is part of almost every Swahili spice mix, from chai to pilau. The cinnamon grown in Zanzibar and Tanzania is true cinnamon (Cinnamomum verum), the same species often sold as Ceylon cinnamon. ShambaFresh supplies cinnamon to the spice trade in the form and grade you buy to.
We supply cinnamon as quills, as bark pieces or chips, and ground. Buyers judge cinnamon on aroma, colour, thickness of the bark and cleanliness, so we grade on those and agree the form and grade with you in writing.
Origin & farming
Cinnamon trees grow in warm, humid areas with good rain, on Zanzibar and on the Tanzanian mainland. They are kept low and cut back regularly so that new shoots grow, and it is the bark of those shoots that is peeled. We buy through our network, so each lot has a known area of origin.
Cinnamon is grown by smallholders with organic-minded practices and little or no use of chemicals. It is not certified organic; if your market requires certification, tell us in your enquiry and we will be straight with you about what we can offer.

Quality, harvest & handling
Quality control
Every lot is checked before dispatch for aroma, colour, bark thickness, moisture, foreign matter and mould. Bark that falls short is sorted out, so what you receive matches the order.
Harvesting
Shoots are cut after the rains, when the bark peels most easily. The outer bark is scraped off and the inner bark is peeled away by hand; as it dries in the shade and then the sun, it curls into quills.
Sorting & grading
Quills are sorted by length, thickness and colour; broken pieces become chips, and some bark is milled into powder. We agree the form and grade with you before we pack.
Packaging
Cinnamon is packed in clean, food-grade bags, cartons or sacks for bulk buyers, or in the pack size and labelling your market needs, kept dry to protect its aroma.
Storage
Cinnamon keeps best sealed, cool and dry. We store it that way until it ships.
Transport
Cinnamon ships at ambient temperature: by sea in containers for bulk orders, and by air for samples and small orders.
