Product overview

PRD 01Herbs & Spices

Black pepper is the dried berry of a climbing vine, and the most traded spice in the world. In Swahili it is pilipili manga. In Tanzania the vines grow in the warm, humid zones of the mainland, trained up shade trees on smallholder farms. ShambaFresh supplies whole black pepper to the spice trade, cleaned and graded to the specification you buy to.

We supply whole black peppercorns in bulk for spice packers, grinders, food manufacturers and importers. Buyers judge pepper on its bulk density, size, moisture, cleanliness and pungency, so we grade on those and agree the figures with you in writing. Ground pepper can be supplied on request.

Origin & farming

PRD 02Sourcing

Pepper needs heat, steady rain and shade, and parts of mainland Tanzania give it all three. The vines climb shade trees on smallholder farms, often alongside other crops. We buy through our outgrower network, so every lot has a known area of origin rather than coming from mixed market lots.

Pepper is grown by smallholders with organic-minded practices: mulching, shade and little or no use of chemicals. It is not certified organic; if your market requires certification, tell us in your enquiry and we will be straight with you about what we can offer.

Quality, harvest & handling

PRD 03Every step
01

Quality control

Every lot is checked before dispatch for bulk density, berry size, moisture, light and broken berries, stems and foreign matter, and mould. Pepper that falls short is cleaned again or set aside, so what you receive matches the order.

02

Harvesting

The spikes are picked by hand once the first berries on them begin to turn from green to yellow or red. Picked too early, pepper is light and weak; too late, the berries fall. The berries are stripped from the spikes and spread to dry without delay.

03

Sorting & grading

After sun-drying, peppercorns are winnowed and cleaned to remove light berries, pinheads, stems and dust, then graded by size and bulk density (grams per litre) to the class you buy.

04

Packaging

Whole black pepper is packed in clean, food-grade bags or lined sacks for bulk buyers, or in the pack size and labelling your market needs, kept dry to protect its oils and pungency.

05

Storage

Dried pepper keeps well when cool, dry and sealed. We store it off the floor in dry conditions until it ships, so it arrives clean and pungent.

06

Transport

Black pepper ships at ambient temperature: by sea in containers from Dar es Salaam or Tanga for bulk orders, and by air for samples and small orders.

Frequently asked questions

FAQBuyer questions

What is black pepper called in Swahili?

Black pepper is pilipili manga in Swahili. Pilipili on its own usually means chilli.

Where is your black pepper grown?

On the Tanzanian mainland, in warm, humid areas where the vines climb shade trees on smallholder farms. We buy through our outgrower network, so each lot has a known area of origin.

What is the difference between black and white pepper?

Both come from the same vine. Black pepper is the whole berry, picked as it starts to colour and dried in the sun. White pepper is the seed alone, after the outer skin has been soaked off. We supply black pepper; ask us about white pepper.

How do you grade black pepper?

By bulk density in grams per litre, berry size, moisture and cleanliness. We agree the grade and the limits with you in writing before we pack.

Is your black pepper organic?

It is grown by smallholders with organic-minded practices and little or no use of chemicals, but it is not certified organic. If your market requires certification, tell us your destination and we will be straight with you about what we can offer.

How do I get a price for black pepper from Tanzania?

Pepper prices move with the world market, so we quote per order. Send us the grade, volume, pack and destination and we will come back with a quote and the terms.

What is the minimum order?

It depends on the grade, pack and destination. Tell us your target volume and shipping window and we will confirm what we can meet.
