Fresh Cauliflower from Lushoto, TanzaniaCauliflower Supplier for Hotels, Wholesale & Export
White, tight-curd cauliflower grown in the cool Usambara highlands of Lushoto — cut fresh, trimmed and graded for hotel kitchens, supermarkets, wholesalers and export buyers.

Product overview
Cauliflower — koliflawa in Swahili — is a cool-season brassica grown for its white head, or curd, of tightly packed flower buds. Kitchens value it for its mild flavour and versatility, from soups and curries to roasting and salads. ShambaFresh supplies fresh cauliflower from the highlands of Lushoto in the Usambara Mountains, where cool nights and steady rain suit the crop, to commercial buyers in Dar es Salaam, Zanzibar and beyond.
We supply cauliflower as whole fresh heads with a collar of wrapper leaves left on to protect the curd, or trimmed close for retail packs. Heads are cut when the curd is firm, white and still tight, before it loosens or yellows, then graded by size and packed to the count or weight your business works to.
Origin & farming
Cauliflower needs a cool climate to form a good white curd, and the Usambara Mountains around Lushoto in Tanga region are one of Tanzania’s best-known areas for highland vegetables. Smallholder farmers there grow cauliflower alongside cabbage, carrots and leeks on rain-fed slopes. Buying from named farming areas through our outgrower network gives a traceable supply rather than mixed market lots.
Our highland vegetables are organically grown and non-GMO: farmers rely on natural farming — crop rotation, mulching, compost and careful water management — supported by agronomy guidance from our team. They are not certified organic; if your market requires certification, tell us in your enquiry. Steady growth with no stress is what gives cauliflower a firm, clean white curd.
Quality, harvest & handling
Quality control
Each lot is checked before dispatch for a firm, compact, white curd, fresh green wrapper leaves, and freedom from yellowing, bruising, loose or “ricey” curd, insect damage and rot. Heads that fall short are set aside so what you receive matches the order.
Harvesting
Cauliflower is cut by hand at the stage the curd is full-sized but still tight and white. Harvest is timed for the cool of the morning and the heads are kept shaded, because sun and heat quickly yellow the curd and shorten shelf life.
Sorting & grading
Heads are trimmed, then sorted by size and quality into the classes you buy — for example by head diameter or count per crate — so a kitchen or retailer gets a consistent product from one delivery to the next.
Packaging
Cauliflower is packed in ventilated crates or cartons, curd up and with wrapper leaves protecting each head, or wrapped individually for retail when required. Pack size, count and labelling follow your specification.
Storage
Cauliflower keeps best cold and humid, close to 0 °C with high humidity, which holds back yellowing and moisture loss. We keep it cool and shaded between harvest and dispatch and move it quickly from Lushoto to the buyer.
Transport
From Lushoto, cauliflower travels by road to Dar es Salaam, Tanga and Arusha, kept cool and protected from sun. For Zanzibar it goes across from Dar es Salaam. For export, it moves on a cold chain by air or refrigerated sea freight depending on destination and lead time.
